3 egg whites
1 cup sugar
1 tsp baking powder
20 saltine white crackers (crushed)
3/4 cup chopped pecans
1/2 tsp vanilla

Directions:
Directions:
Preheat oven to 300º.
Beat egg whites until stiff; then add sugar and baking powder and beat until very stiff.
Combine crushed crackers and pecans; then fold into egg mixture by hand; then add vanilla.
Bake in greased pie pan for 45 minutes.
Let cool; then top with whipped cream or Cool Whip.
Garnish with flakes or chocolate and pecans if desired.
