3 lbs roasting chicken
1 cup chopped onion
1 tablespoon salt
2 teaspoons paprika
2 teaspoons dried oregano leaves
2 teaspoons dried thyme leaves
1 teaspoon pepper
1 teaspoon garlic powder

Directions:
Directions:
In a small bowl, combine all ingredients except chicken and onions. Rub herb mixture inside and outside of the chicken. Place chicken in ziplock bag and refrigerate overnight. Remove chicken from bag and stuff with onions. Place chicken in slow cooker on low for 6-8 hours or high 2-4 hours. Or until chicken juices run clear and chicken reaches 180 degrees. Let stand 15 minutes before carving.
