6 oz. uncooked egg noodles
1 T. olive oil
1/4 c. chopped onion
1/4 c. chopped red bell pepper
1 pkg. (10 oz.) frozen spinach, thawed and drained
2 boneless skinless chicken breast halves (3/4 lb.), cooked and cut into 1 in. pieces
1 can (4 oz.) sliced mushrooms, drained
2 c. (8 oz. ea.) shredded swiss cheese
1 container (8 oz.) sour cream
3/4 c. half and half
2 eggs, slightly beaten
1/2 tsp. salt
red onion and fresh spinach for garnish

Directions:
Preheat oven to 350 degrees. Prepare egg noodles to pkg. directions and set aside. Heat oil in large skillet over medium high heat. Add onion and pepper; cook and stir 2 min. or until onion is tender. Add spinach, chicken, mushrooms and cooked noodles; stir to combine. In medium bowl, combine cheese, sour cream, half and half, eggs and salt; blend well. Add cheese mixture to chicken mixture; stir to combine. Pour into 13x9 in. baking pan coated with nonstick cooking spray. Bake covered, 30 to 35 min. or until heated through and bubbly. Garnish with red onion and fresh spinach if desired. Yield: 8 servings.
