1½ cups rolled oats
1¼ cup whole wheat flour
1 cup brown sugar
½ tsp. baking soda
¼ tsp. salt
1 cup butter, softened
2 - 2½ cups chopped dates
¼ cup brown sugar
1 cup water
1 tsp. lemon juice

Directions:
Directions:
Preheat oven to 350º. In a medium saucepan combine dates, sugar and water. Bring to boil, reduce heat and stir until dates are softened. Remove from heat, add lemon juice, stir and set aside.

In a large bowl combine oats, flour, sugar, soda and salt. Add in butter in chunks and cut into mixture until crumbly. In a 9 inch square baking dish, place 1/2 of the mixture and pat down so its firm. On top, spread the date mixture. Pour on remaining flour mixture and pat down evenly. Bake for 30 to 35 minutes or until lightly browned.
