2 pounds bulk pork sausage
1 cup finely chopped green bell pepper
3/4 cup chopped onions
3/4 cup sliced mushrooms
2 1/2 cups coarsely chopped celery
2 packages (2 1/8 ounce) chicken noodle soup mix
4 1/2 cups boiling water
1 cup uncooked rice
1/2 teaspoon salt
1 cup sliced almonds

Directions:
Directions:
In a skillet brown the sausage, drain fat, add green pepper, onion, mushrooms, and celery (save 1 cup celery). Combine soup mix with hot water in a pan, add rice, cover and simmer for 20 minutes; stir rice into the vegetables and sausage, pour into a greased casserole dish, top with uncooked celery and almonds. Bake at 375º for 20 minutes.

This recipe was made once for a missionary banquet at my church. Each lady was to follow the directions as written, AND each one was very different, depending on the brand of soup mix, type of sausage, and size of chopping etc.
