2-3 pounds of chicken breast or one whole chicken cut up in large pieces.
8 cups of chicken broth

For the dumplings:
2 cups of flour
4 tsp. baking powder
3 tsp. butter
3/4 tsp. salt
3/4 cup of milk
1 egg beaten into milk

For the chicken and broth:

In a large stock pot add chicken and water. Place over medium-high heat and bring to a rolling boil. Lower heat to medium-low and cook for 1 hour or until chicken is cooked through.

Remove chicken from broth and set aside to cool.

When chicken has cooled, remove skins and bones. Cut chicken into bite-sized pieces, cover and set aside.

Bring broth back to a rolling boil.

While broth is heating, prepare dumplings.

For the dumplings:
Sift together flour, baking powder and salt. Cut in butter and add milk. Roll out on a floured surface, about 1/4" to 1/2" thick. Cut into 1" long strips and then crosswise into about 2" strips.

Drop dumplings in the chicken broth. Simmer about 20 minutes, until tender. Dumplings will rise to the top when they are done. Lower heat to low, add chicken back in to pot with dumplings, cook for 10 minutes longer or until chicken is warm again, stirring occasionally. Turn off the heat and cover. Allow to rest 30 minutes.

I remember Mother would by a hen for her Chicken and dumplings. She would cut it in pieces, cook it until tender. Remove it from the broth, cool it and debone it. She would cook her dumpling in the broth.
