2 T. mild soy sauce
1 T. fresh ginger, julienne
1/2 tsp. Asian sesame oil
2 T. water
3/4 lb. snow peas (about 4 cups trimmed)
1 T. + 1 tsp. canola oil
pinch of kosher salt
6 medium shiitake mushrooms, stemmed and cut into 1/4 inch slices
1 tsp. sesame seeds, toasted

In a small bowl combine the soy sauce and sesame oil with water and set aside. Heat a 10-inch skillet over medium-high heat for about 30 seconds and add 1 tablespoon of the canola oil, swirl to coat pan, When the oil is very hot, add the mushrooms and cook stirring once, until they begin to brown lightly. About a minute. Add the ginger and stir fry until the mushrooms are golden and the ginger is softened, about 1-2 minutes more. Add the remaining canola oil, the snow peas and salt. Stir fry for about 30 seconds. Add the soy sauce mixture and continue to stir fry until the snow peas are crisp-tender and the liquid is reduced to a glaze, about 1-2 minutes. Season to taste and garnish with toasted sesame seeds. Serve immediately.
