4-6 medium potatoes, peeled, grated (cover with cold water)
1 tsp. salt
1 small onion, grated
4 eggs, well beaten
1/2 c. butter, (or Ghee) melted
salt & pepper to taste

Directions:
Drain potatoes well. Add remaining ingredients together and stir to blend. Spoon mixture into well greased muffin pan, filling 3/4 full. Bake 350º for about an hour.
