1/2 medium onion, finely chopped;
6 tbsp butter;
2 cups Arborio rice;
44 oz of chicken broth liquid (or 3 each 14.5 oz cans)
Chopped olives, mushrooms, vegetables, meat, or seafood as desired;
3/4 cup grated Parmesan cheese.

1. Place the onion and butter in a large bowl and microwave, uncovered, on HIGH for 3 minutes, or until the butter melts and the onion wilts.
2. Stir in the rice and microwave, uncovered, on HIGH for 3 minutes, or until the rice begins to turn translucent.
3. Stir in the broth, cover with plastic wrap, and microwave on HIGH for 12 minutes, or until boiling.
4. Remove the plastic wrap, stir, and continue to microwave, uncovered, on HIGH for 8-9 minutes more, or until rice is cooked through but still chewy.
5. Stir in olives, mushrooms, or other optional ingredients and microwave, uncovered, on HIGH for one more minute.
6. Stir in the cheese and serve right away.
