6 chicken breasts
1 head broccoli
1/2 pound mushrooms

SAUCE
2 tablespoons flour
2 tablespoons butter
1 cup chicken broth
1 cup cream or non-fat yogurt
1 teaspoon curry powder
Cayenne to taste or other desired seasoning
1 cup grated cheese of choice, or chunks of Velveeta, or mayonnaise mixed with 1 teaspoon lemon juice

Boil chicken breasts until done. Reserve broth.
De-bone and layer meat pieces in bottom of casserole.
Add a layer of cooked broccoli.
Add a layer of sautéed mushrooms.
Cover with sauce.

SAUCE
Melt butter in skillet, blend in flour well.
Stir in chicken broth.
Boil 1 minute stirring constantly.
Stir in 1 cup cream (or nonfat yogurt if watching calories) curry powder and cayenne pepper to taste or other desired seasonings.
Stir in 1 cup of grated cheese, or chunks of Velveeta, or mayonnaise mixed with 1 teaspoon lemon juice.

Bake at 325º for 30 minutes or until hot and bubbly.

This was the first chicken recipe I tried as a young bride in 1958. It was eaten…and nobody got sick. In fact it continued to be a welcomed dish throughout the years…and the kids ate their broccoli!
