1 small can Ortega Whole Chiles
1/2 pound Jack Cheese (or Mozzarella)
2 egg whites, beaten until stiff
1/8 teaspoon baking powder
2 egg yolks, slightly beaten
pinch of salt for batter
salad oil

Directions:
Directions:
Split chiles down the center lengthwise. Remove seeds. Cut cheese into strips 1/2” x 1/2" x 3". Place cheese on chile and fold chile around it. Fold egg yolks into stiffly beaten egg whites and add 1/8 tsp baking powder. Dip stuffed chile into egg batter coating each piece well. Spoon into 1 inch of oil and fry until golden brown on both sides. Drain well on paper towel and serve with Ortega Chile Salsa as topping.

In the late 50's, as a novice cook and newly-wed, I flopped big-time the first time I made these. I didn't know to heat the oil first. I put my rellenos in the skillet and they sat there soaking up the oil while it heated. Needless to say, they were not edible.
