1 pkg. Spinach & Feta Ravioli
1 1/2 T. olive oil
3 garlic cloves, minced
3/4 c. broccoli florets, blanched
3/4 c. cauliflower, blanched
1/2 c. canned or cooked white beans, drained
1 oz. sun-dried tomatoes, cut
1 bunch arugula leaves
1/2 T. grated parmesan cheese
Salt & Pepper to taste

Directions:
Directions:
Boil ravioli according to package directions, lightly oil and chill.

In large skillet heat olive oil. Add garlic and cook ove medium heat until lightly toasted. Add blanched broccoli, cauliflower, cooked white beans and sun-dried tomatoes. Saute 3-4 minutes. Toss with cooked ravioli and arugula leaves. Top with grated cheese and seasoning.
