1 medium size eggplant, sliced
2-3 zucchini, sliced 1 inch thick
1 bell pepper, diced
1 medium onion, diced
1 large can of diced tomatoes, with juice
1 pkg mushrooms, sliced
1 Tbsp. basil, chopped
garlic powder, salt, pepper, Italian seasoning blend

1 lb lean ground hamburger
grated Mozzarella

Sprinkle eggplant, zucchini, bell pepper with a bit of olive oil and place on hot grill until roasted; dice into squares. You can skip grilling and just dice the veggies but it does give it a more dense flavor (or you can use left over veggies if you have them).
Brown hamburger and onion in a skillet. In another deep pot, add tomatoes, and all of the diced vegetables. Add seasonings to taste. Add hamburger and onion mixture. You can add a small amount of tomatoe sauce or prepared pasta sauce if you like but not too much as this will cook down and will become watery if you add too much. Cover pot and cook over low heat for about an hour.
Pour into a 9x12 pan and top with mozzarella and a bit of parmesan cheese. Bake for about 20 minutes at 350º until cheese is lightly browned.

Years ago, I wanted to make something for a family get together and found the recipe for ratatouille. I played with it a bit by adding the hamburger and mozzarella and making it a casserole. Everyone loved it and my Aunt Mada renamed it calling it "Rata-guille" which it is now known as!
