2 c hot honey
2 c sugar
4 eggs, beaten
2 tsp baking soda
2 tbsp vinegar
1 tsp nutmeg
1 tsp cinnamon
1 tsp ginger
8 c flour

Directions:
Directions:
Mix the sugar with the hot honey & beat until foamy.
Add the beaten eggs.
Dissolve the baking soda in vinegar & add.
Mix the spices into the flour & gradually add into the mixture.
Put dough in refrigerator to cool, overnight if you like; this makes it easier to work.
This recipe makes a lot of cookies so work with a small amount of dough at a time.
Roll out dough & cut with cookie cutters.
Bake at 375º & don't let these get too brown.
If kept in a stored container, these soften up a little.

When I was a child in rural Nebraska, Mom & I would go over to our neighbors to get farm fresh eggs. We were always greeted with a smile, a cup of coffee for Mom, milk for me & a plate of honey cookies. Thank you, Mr. & Mrs. Lerch, for some of my favorite memories.
