4-6 pork chops or 1 in. slices of pork tenderloin
2 large scallions, chopped
2 T. vegetable oil
2 T. lemon juice
2 tsp. honey
1 tsp. ground allspice
1 tsp. dried thyme
1 tsp. salt
1/2 tsp. black pepper
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. hot sauce

1. In a small bowl, mix together all ingredients except pork.
2. Place pork in a glass baking dish. Rub jerk seasoning over both sides of meat. Cover and refrigerate 2 hours.
3. heat oven to 400º F. Heat a skillet over high heat. Brown pork in skillet, cooking 2 minutes per side.
4. Place meat back in glass baking dish and bake in 400º oven for 18 to 20 minutes, or until thermometer registers 155º on meat thermometer. Let meat rest 10 min.
