1 can salmon
1/4 tsp pepper
1/2 tsp salt
2 eggs, slightly beaten
1/2 cup milk
1/2 cup onion (or more if desired)
1/2 crushed unsalted crackers
1 tsp baking soda

Directions:
Directions:
Preheat oven to 375º.
Remove skin and bone from salmon and flake with fork.
Add remaining ingredients and mix well.
Form 6 patties. Roll in cornmeal if desired.
Spray muffins tins and place 1 patty in each.
Bake 30 to 50 minutes until golden brown.
Remove and serve warm.
