1 1/4 c. diced cooked chicken
1 c. diced Monterey Jack cheese
1/3 c. Sour Cream
Black Olives
3/4 c. chopped onion
2 cloves garlic
2 c. cut up peeled tomatoes, mashed
1/4 c. raisins
2 t. chili powder
1/2 tsp. cinnamon
1 tsp. salt
1/4 c. chicken broth
1/2 oz. unsweetened baking chocolate, cut up
10 tortillas
1 c. shredded Monterey Jack cheese
Directions:
Directions:
Combine chicken, diced cheese, and sour cream. Follow package directions for softening tortillas. Put 2 rounded T. of chicken mixture in center of each tortilla, place one or two olives in mix and roll. Place seam side down in a glass baking dish. Set aside. Place the rest of the ingredients, except chocolate and cheese, into a pressure cooker. Close cooker cover carefully, put pressure regulator on vent pipe. Cook 10 minutes at 15 lb. pressure. Cool pressure cooker at once (by running cold water over cooker). Blend hot mixture in a blender or processor, adding chocolate, and process until smooth. Pour sauce over enchiladas. Sprinkle with shredded cheese. Bake in preheated oven at 400º F for 15 min.
