1-1 1/2 lb. any fish
1/4 c. heavy cream
3 T. butter or margarine, melted
2 T. white wine or chicken broth
1 T. chopped parsley
2 tsp. finely chopped shallot or white part of green onion
1/4 tsp. each of dried thyme, margoram, and ground pepper
1/8 tsp. salt
4 oz. fresh mushrooms, sliced thinly (about 1 1/2 c.)

Mix all ingredients until well blended. Marinate fish 30 to 60 minutes. Spoon marinade over fish 2 or 3 times during baking. Bake: Heat oven to 375ºF. Place marinaded fish in lightly greased shallow baking dish. Pour remaining marinade over fish and bake uncovered about 10 minutes per inch of thickness, basting occasionally (no need to turn). Fish is done when thickest part is just barely opaque—lift up a flake or two with a fork and look.
