2 lbs. of any white fish
1/3 c. vegetable oil
1/3 c. soy sauce
¼ c. thinly sliced green onions
2 T. grated ginger root
1 ½ T. rice-wine vinegar
1 tsp. each minced garlic, seeded jalapeno
pepper, and oriental sesame oil

Mix all ingredients until well blended. Marinate fish about 15 min. Baste with marinade during cooking.

Fish Marinades: choose from the following methods:
Bake: Heat oven to 375ºF. Place marinade fish in lightly greased shallow baking dish. Pour remaining marinade over fish and bake uncovered about 10 minutes per inch of thickness, basting occasionally (no need to turn). Fish is done when thickest part is just barely opaque—lift up a flake or two with a fork and look.

Broil: Fillets or steaks that are 3/4-1 inch thick are best for this. Line broiler pan with foil for an easy clean-up. Arrange marinated fish on lightly greased rack. Broil about 4 inches from heat source 10 minutes per inch of thickness, basting occasionally with reserved marinade and turning steaks halfway through cooking (don't turn fillets).

Grill: For best results use fish that's at least 1 inch thick. A hinged wire grill makes turning easy. Place marinades fish on oiled grill about 5 inches above hot coals. Grill 8 to 10 minutes per inch of thickness, turning once and brushing 2 to 3 times with reserved marinade. Test as for baked fish. You can also wrap marinated fish in foil for grilling. Pierce foil for more smokey flavor and cook 10 to 12 minutes per inch of thickness.
