12 oz. sweet potato, peel & shred
12 oz. white potato, peel & shred
1 mild white onion, peel & shred
1/4 c. whole wheat flour
1/2 ts. salt
1/2 ts. pepper
3 Tbsp. olive oil
1/4 c. sour cream
1/4 c. mayonnaise
1/4 c. chopped apple
1 Tbsp. horseradish
Preheat oven to 200*
Combine sweet potato, white potato, onion, egg, flour, salt & pepper in large bowl.
Form mixture into 24 patties, approx. 2 Tbsp. each
Heat 2 Tbsp. in large nonstick skillet over med. heat.
Add pancakes & cook about 7 minutes, turning once, browned on both sides.
Transfer to baking sheet and keep warm in oven.
Combine sour cream, mayo, apple and horseradish in small bowl and mix well.
Serve with pancakes.
