1 ¼ Cup Butter Softened
4 Cups Flour
1 Cup Packed Brown Sugar
1 Teaspoon Salt
½ Cup Sugar
1 Teaspoon Baking Powder
2 Eggs
¼ Teaspoon Baking Soda
¼ Teaspoon Vanilla
Red/Green Gel Food Coloring
½ Teaspoon Mint Extract (Optional)

In a large mixing bowl, cream butter and sugars. Beat in eggs and extracts. Combine flour, baking powder, soda and salt; gradually add to creamed mixture. Divide dough into fourths. Tint two portions red and two portions green mixing thoroughly. To make pinwheel cookies, divide red and green portions in half. Roll out each portion between waxed paper into 9inchX6inch rectangles. (There should be 4 red rectangles and 4 green rectangles) Refrigerate for 30 minutes (I usually put onto baking sheets and let sit on table in garage). Remove waxed paper. Place a green rectangle over a red rectangle. Roll up tightly jelly roll style starting with a long side until all rectangles are completed. Wrap in plastic wrap and chill for 2 hours or until firm. (At this point you can store in the freezer and pull out to bake when ready). To bake, unwrap dough and slice in ¼ inch slices and place 1 inch apart onto ungreased baking sheet. Bake 375 for 9-11 minutes or until set. Remove to wire racks to cool. Makes 10 dozen cookies
