Granny Scott's Butterscotch Pie Recipe

Baked pie crust
1 cup packed brown sugar
2 tbsp. cornstarch
2 tbsp. flour
2 1/2 cups milk
3 egg yolks (save the whites for the meringue)
1 tbsp. butter
1/2 to 1 tsp. vanilla

Meringue:
3 egg whites
1/4 tsp. cream of tartar
Capful of vanilla
6 tbsp. granulated sugar

Mix together the brown sugar, cornstarch, flour, and milk. Heat in a saucepan over medium heat stirring constantly until thickened. Beat eggs and add spoonfuls of hot mixture to eggs one at a time and stir so as to not cook the egg yolks. Return eggs to mixture and cook for two minutes. Remove from heat and add butter and vanilla. Pour into baked pie crust.

Meringue: Put egg whites in a metal bowl and put in refrigerator. When ready, beat whites with 1/4 tsp. cream of tartar and a capful of vanilla and beat until foamy. Add sugar one spoon at a time and beat till not grainy. Add another tbsp. of sugar and beat. Add up to 6 tbsp. of sugar until firm peaks have formed. Top the pudding mixture making sure it is completely covered. Bake at 425º for approximately 8 minutes or until brown.
