Ingredients: Chocolate Mixture Base:
1 cup of white sugar
1½ cups flour
¼ cup cocoa
1 teaspoon baking soda
¼ teaspoon salt
1 cup water
½ cup of oil
1 tablespoon of vinegar
1 teaspoon vanilla
Cheese Mixture:
1 package of softened Philadelphia Cream Cheese
1 egg, slightly beaten
1/3 cup of white sugar
Pinch of salt
1 6-8 oz package of chocolate chips
In a bowl combine the first four ingredients well, then add chocolate chips and set aside.

Directions:In a bowl combine the first four ingredients well, then add chocolate chips and set aside.
Mix well. Line small muffin tins with mini-sized paper cups, fill 1/3 to ½ full with this mixture.
Drop a spoonful of cheese mixture (see below) on top.
Bake 10-12 minutes at 350° (or until inserted toothpick comes out clean). Remove from tins and cool completely, the chocolate chips will solidify.
Yields about 3 dozen cupcakes |

Notes: These lovely mini-sized chocolate cupcakes are served on special occasionsfor my family and friends. They are absolutely scrumptious!
Note: if baking full-sized muffin paper cups then bake 20 -25 minutes at 350° or until toothpick comes out clean. Yields about 20 large muffins
