2 Chicken Breasts
1/2 cup onion diced
3/4 cup to 1 cup canola oil
1 package of corn tortillas
Salt and pepper

Directions:
Directions:
1. Boil chicken breasts in pot of boiling water. When cool enough to handle, shred.

2. Saute the onions with a little oil and add chicken. Season with salt and pepper. If chicken seems dry, add a little water. Cool and set aside.

3. Bring 1/2 - 3/4 cup canola oil to frying temperature of 350 to 375ºF

4. Begin by placing each corn tortilla in the oil for 10 seconds on each side to soften the tortilla. Repeat with all tortillas. Place 1/4 cup of the prepared chicken in each softened tortilla. Roll into a log and place back in the frying pan until they are golden brown and crispy.

5. Enjoy!
