2 to 3 cups or more of stuffing
1/2 onion, chopped
2 stalks celery, chopped
3/4 cup sliced mushrooms
1 cup chopped broccoli
1/2 cup sliced water chestnuts
3 cups chopped cooked chicken or turkey
1 or 2 cans cream of chicken soup
small amount of pastry mixed with sage or sweet basil

1. Grease casserole. Make fresh stuffing moist enough to line casserole, then bake it for 25 minutes at 350º to crisp. If you are using leftover stuffing there is no need to bake it; just line the casserole bottom and sides with it, 1/2 inch thick and packed on firmly.

2. Saute onion, celery, mushrooms, broccoli and water chestnuts in large frying pan sprayed with Pam. Add chicken or turkey and 1 can soup. Mix well. If not creamy enough, add second can of soup. Pour into casserole.

3. Roll out pastry and cut into various shapes. Place on top of casserole. Bake at 350º for 45 to 60 minutes.
