5 C Chicken Breasts, cooked and cut up
2 ribs Celery, finely chopped
2 Scallions, white and green parts, minced
1 lg Green Apple, peeled, finely chopped
3/4 - 1 C Mayonnaise
2 Tblsp FRESH Lemon Juice
2 Tblsp FRESH Parsley, minced
2 Tblsp FRESH Basil, minced
Salt and freshly ground Pepper to taste
3 C Iceberg Lettuce, shredded (optional)

Directions:
Directions:
Combine the mayonnaise and lemon juice, then mix in the chicken, celery, scallions, apple, parsley, basil, salt and pepper in a large bowl and mix well. Chill covered for 1 - 8 hours (it keeps well for a couple of days).

To serve, arrange the lettuce on a serving platter. Mound the chicken mixture over the lettuce. Serve chilled.

Note: You really don't need the lettuce - it's tasty by itself.
