5 tbsp. butter
1 cup granulated sugar
3 large eggs
1/2 cup buttermilk
1 tsp. vanilla extract
1 1/3 cup flaked coconut
1 - 9 inch baked pie shell in a glass pie dish.

Directions:
Directions:
1. Put 4 tablespoons of the butter in a 4-cup glass measuring cup. Microwave on high for 1 minute, or until melted.

2. Beat in sugar and eggs; stir in buttermilk and vanilla. Add 1 cup of the coconut to pie filling and pour into the baked pie shell.

3. Rotating dish every 3 minutes, microwave on medium-high (70%) for 8 to 10 minutes, or until centre is set.

4. Place remaining tablespoon of butter in a small casserole. Microwave on high until melted. Toss remaining coconut with butter. Stirring every 30 seconds, microwave on high for 2 to 3 minutes, or until coconut is toasted. Top pie with toasted coconut.
