2 Cornish hens
salt to taste
freshly ground black pepper
minced fresh rosemary leaves OR
dried tarragon leaves
1 onion, chopped into 1 inch pieces
1 1/2 carrots, chopped into 1 inch pieces
1 1/2 stalks celery, chopped into 1 inch pieces.

Directions:

1. Pre-heat oven to 350º.

2. Rinse the Cornish hens with cold water and pat dry. Season with salt and pepper inside and out. Sprinkle with rosemary or tarragon leaves.

3. Put a rack in a roasting pan and place the hens on in. Scatter the onion, carrots, and celery around them.

4. Roast in the oven until the hens are golden brown and crisp and the juices run clear when the thigh is pierced with a sharp knife, about 45 minutes.

5. Transfer the hens to a serving platter and let rest for about 5 minutes before serving.
