Ingredients: 1 lb asparagus, trimmed 1 sheet frozen puff pastry thawed - about 1/2 pound Flour for dusting 1 cup fontina cheese, grated - about 3 ounces 1 cup gruyere cheese grated - can use other cheese combinations or use 2 cups of a single cheese 1 T minced shallot 2 large egg yolks 3 T whole milk, or 1/2 and 1/2 1/8 t freshley grated nutmeg salt and pepper to taste 2 t extra virgin olive oil 1/2 t finely grated lemon zest

Directions:Heat over to 400 degrees
Bring about 1" of water to a boil in a large skillet. Add asparagus; cook until bright green and crisp tenter about 2 - 5 mins. depending on the thickness of the asparagus. Drain and transfer to a bowl of ice water to stop the cooking. Drain, pat dry
Roll out puff pastry to a 10x 16" rectangle (to fit onto a cookie sheet) on a floured surface. Line a rimmed cookie sheet with parchment - I have done it with and without the parchment. Parchment makes clean up easier. Prick all over with a fork. (The pastry is hard to roll into the exact shape. There is usually excess pastry around the edged. I usually roll the excess pastry into a rim around the pastry to keep the filling from running.) Bake until light golden brown about 12 mins. Cool slightly on the baking sheet.
As pastry cooks, mix the cheese shallot, egg yolks, nutmeg and a pinch of salt and pepper in a bowl to combine. Spread the cheese mixture evenly over the pastry up to the rim on the edges. Toss the asparagus in olive oil, and salt and pepper to taste.
Arrange asparagus on the tart - to fit the pastry. Bake until cheese mixture is slightly puffy 15-20 minutes. Sprinkel with lemon zest. Serve warm or at room temperature.
