Crust:
1 C Flour
1/4 C Sugar
1 tsp grated Lemon Peel
1/2 C Butter
1 Egg Yolk, slightly beaten
1/4 tsp Vanilla

Filling:
5 - 8 oz Cream Cheese, softened
1/4 tsp Vanilla
3/4 tsp grated Lemon Peel
1 3/4 C Sugar
3 Tblsp Flour
1/4 tsp Salt
4 Eggs
2 Egg Yolks
1/4 C Whipping Cream

Strawberry Glaze:
3 C Strawberries
1 C Water
2 Tblsp Cornstarch
1/2 - 3/4 C Sugar

Directions:
Directions:
Crust: Combine flour, sugar and lemon peel. Cut in butter until consistency of meal. Add egg yolk and vanilla and blend thoroughly. Pat 1/3 mixture on bottom of 9 inch springform pan with sides removed. Bake at 400º for 8 minutes or until golden. Cool. Attach sides of pan to bottom and pat remaining dough on sides to 1 3/4 inches. *Can use a graham cracker crust if desired.

Filling: Beat softened cream cheese until creamy. Add vanilla and lemon peel and mix. Mix together sugar, flour and salt, then add to cream cheese mixture gradually. Add eggs and egg yolks, one at a time, beating after each addition just until blended. Stir in whipping cream, then pour into crust-lined pan. Bake at 450º for 12 minutes. Reduce temperature to 300º and bake 55 minutes longer. Remove from oven and cool for 30 minutes. Loosen sides with spatula. Cool for 30 minutes and remove from pan. Cool 2 hours longer.

Strawberry Glaze: Crush berries in saucepan. Add water and cook 2 minutes. Press through sieve and place puree back in pan. Mix cornstarch with sugar and stir into strawberry puree. Bring to boiling, stirring constantly. Cook and stir until thick and clear. Cool to room temperature and pour on cheesecake. *Can use strawberry, cherry or other pie filling instead, if preferred.
