"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
In small bowl let cookie dough soften so you can work with your hands.
Add the almond extract & work into dough.
Lay out 2 pieces of wax paper & divide dough in half.
Use powdered sugar (not flour) to coat wax paper.
With one piece of wax paper on top, roll out dough to size of bottom of springform pan.
Spray bottom of pan with cooking spray and cook bottom piece of dough until golden, about 15 - 20 minutes.
Roll out other piece and cook on sprayed cookie sheet until done.

For filling, beat whipping cream until stiff; set aside.
Beat 2 cubes of cream cheese; combine with whipping cream gently; add a little powdered sugar at a time, tasting until the sweetness is to your liking.
Fold in chopped strawberries & blueberries gently.
After the bottom crust has cooled, stand Lady Fingers up all the way around the springform pan.
Add the filling.
Set the top crust on top; trim it to fit inside the pan.
Refrigerate for several hours to set up nicely.
