4 cups loosely packed spinach (no stems)
½ cup loosely packed parsley (no stems)
½ cup grated Parmesan cheese
¼ cup olive oil
2 cloves minced garlic
Salt & Pepper
1 bag pasta

Directions:
Directions:
Chop spinach and parsley into small pieces. In a medium bowl, add cheese, oil, garlic, salt and pepper. Add spinach and parsley then mix well.
Cook pasta in a large saucepan of boiling salted water until al dente (tender but firm) Drain well reserving ¼ cup of cooking liquid. Blend hot cooking liquid with spinach mixture. Blend well. Add “pesto” sauce to pasta and toss well.
