1/2 lb. Baby Swiss cheese, grated
2 tbsp. mayonnaise
1/4 tsp. Dijon mustard
1 tsp. sauterne cooking wine
4 green onion tops, finely chopped
Party rye bread

Directions:
Directions:
In a food processor, pulse cheese until pulverized. Add mayonnaise, mustard and wine slowly to get desired spreading consistency. Remove from food processor. Add onion tops and form into a firm ball. Serve with rye bread.

I learned the hard way to wait to add onions so I would never again have to spend the evening explaining why the cheese ball was green!
