DRESSING:whisk together and set aside
1/3 cup olive oil
1/4 cup lemon juice, 2 lemons
2 tsp oregano
2 tsp thyme
1 tsp Dijon mustard
1 clove garlic, minced
1/4 tsp pepper
1/8 tsp salt
SALAD: place, in piles, on a bed of chopped romaine
1# small red potatoes, boiled then halved in butter & parsley
1# asparagus, steamed
1/2 green beans, steamed
2-3 fresh beets, boiled and sliced
1/2 can white or kidney beans, rinsed
1 small red onion, thinly sliced
4-6 hard boiled eggs, halved
1 jar marinated artichoke hearts
1/2 cup kalamata olives

Veggies can be room temperature, but, not cold.
Make double of the dressing or use bottled.

Most of the time is in the fresh veggies.
Beets take 60-90 minutes to boil. Can do day before.
Beans and asparagus take 3-5 minutes to steam.
