1 tbsp. vegetable oil
1 onion, chopped
1 10 oz. pkg. frozen chopped spinach, thawed & drained
chopped fresh garlic
diced bell pepper
5 eggs beaten
3 c. shredded Muenster cheese
1/4 tsp. salt
1/8 tsp. ground black pepper
1/8 tsp nutmeg

1. Preheat oven to 350º. Lightly grease a 9" pie pan.
2. Heat oil in a large skillet over medium-high heat. Add onions and peppers and cook, stirring occasionally, until they're are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
3. In a large bowl, combine eggs, cheese, salt & pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.
4. Bake until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.

The best thing about this recipe is that you can add virtually any type cheese, nuts, bacon/sausage, any vegetable -canned artichoke hearts- and any herbs/spices you chose. Be creative! Try putting mixture into muffin pans (mini pans as well). My favorite is brie cheese, asparagus tips, sautéed fresh mushroom & smoked salmon.

LET YOUR IMAGINE RUN WILD! ...sundried tomatoes, asparagus, smoked bacon, sliced ham, bell pepper, green chilies, etc. You really can't ruin it!
