1 large can or bag of sauerkraut
Pork drippings or trimmings
1/2 c. yellow or green dried split peas
1 tsp. salt
1/2 tsp.pepper
1 tbsp flour or corn starch
1 small onion (chopped fine)

©Wash sauerkraut well,cook in water(just enough to cover) for about 1/2 hojur.Cook split peas in 1 1/2 cups water.When they come to a boil,lower heat ,simmer in tightly covered pan until very soft (about 1 hour.Brown pork trimmings in fry pan ,brown slowly,add onion & saute about 5 minutes. Add flour .Brown lightly.Add drained sauekraut, split peas,salt & pepper. If too tart,add some sugar. Split peas should be mushy.
