1 lb sauerkraut, rinsed and drained
3 oz salt pork, diced
1/2 cups chopped onion
1 clove garlic, chopped
1/2 cup water
salt and pepper to taste
2 Tbsp olive oil
1 lb kielbasa or other smoked sausage in 2 inch slices

Directions:

In a medium saucepan over medium heat, saute salt pork until crispy and fat is rendered.

Add onions and saute until golden. Add garlic and cook about 30 seconds until fragrant.

Stir in sauerkraut and water and bring to a gentle boil. Season with salt and pepper. Reduce heat, cover, and simmer for at least one hour, stirring occasionally. If necessary, add more water to prevent drying out.

Heat 2 Tbsp oil In a medium skillet over medium-high heat. Saute sausage until brown on all sides.

Serve sausage on a bed of sauerkraut.
