4 to 4 1/2 cups all purpose flour,
1/2 cup sugar,
1 1/2 tsp. salt,
2 packages active dry yeast,
3/4 cup milk,
1/2 cup water,
1/2 cup butter,
1 egg,


Filling:
2 packages (8 oz. each) cream cheese, softened,
1/2 cup sugar,
1/4 tsp. nutmeg,
1/2 tsp. vanilla,
dash salt,
1 14 oz. can crushed pineapple in heavy syrup, well drained:


Topping:
11 glazed red cherries, halved;
2 cups confectioners' sugar,
3 tbsp. milk,

In a large bowl mix 2 cups flour, sugar, salt and undissolved yeast.
In saucepan combine milk, water and butter. Heat over low heat until very warm (120 F. to 130 F.). Butter does not need to melt. Gradually add to dry ingredients. Add egg and 1 cup flour. Beat at high speed 2 minutes. Stir in enough additional flour to make a stiff batter. Cover bowl tightly with foil or plastic wrap. Rrefrigerate at least 2 hours.

Filling:
When ready to shape trees, in mixer bowl combine cream cheese, sugar, nutmeg, salt and vanilla. Stir in pineapple.

Grease 2 large cookie sheets. Divide dough in half. On lightly floured surface roll remaining half to 11 X 10 rectangle. Spread with half the filling. Roll up from 11 in side, pinch seam to seal. Cut crosswise into ELEVEN 1 inch slices. Arrange 10 pieces cut side down on cookie sheet in triangular shape. Center remaining piece at base of triangle. Cover lightly with plastic wrap. Repeat with remaining dough. Let rise in warm place, until double in blulk, about 50 minutes.

Preheat over 375. F. bake 15 minutes. Cover edges with foil to prevent darkening. Bake 5 to 10 minutes longer until center is lightly browned. Place on wire racks to cool. (Can be prepared ahead. Wrap tightly and freeze up to 4 weeks. Thaw wrapped at room temperature. Unwrap and warm in preheated 350 F. oven 10 minutes.

Topping:
Place cherries cut side down in center of each roll. Combine confectioners sugar and milk, mix until smooth and drizzle over cakes.
