1 whole chicken, fryer size
1 onion, sliced
3 - 4 celery stalks (with leaves), chopped
1 carrot, whole
Salt (to taste)
Dash red pepper (to taste)
Fresh basil, or rosemary
Fresh parsley
1/2 - 1 cup white wine

Directions:

In a large pot, add a whole chicken or hen with onion, celery, carrot, salt and a pinch of red pepper. Add enough water to cover and bring to a boil. Lower heat, cover and simmer slowly for at least two hours to assimilate the flavors. About halfway through, add the fresh basil (or rosemary) and parsley. Add the white wine and cook down slowly. Then check for doneness; chicken juices should run clear.

Skin and cut your chicken in whatever portions you like. The broth can be used for dishes such as Chicken n' Dumplins, soup, and pasta dishes. Both the broth and chicken freeze beautifully.

Note: Red pepper is a must with chicken but be careful. A little goes a long way!
