1/2 cup chopped onion,
1/4 cup butter,
1 can mushrooms (save liquid);
1 can crab,
1/2 cup cracker crumbs,
2 tbsp. parsley,
1/2 tsp. salt,
1/4 lb. fresh shrimp,
milk,
1/2 tsp. paprika,
1/2 cup dry white wine,
4 oz. swiss cheese, shredded ( 1 cup);
2 lbs. sole fillets, (8);
3 tbsp. butter.
3 tbsp. flour,

In skillet, saute onion in 1/4 cup butter, until tender, stir in drained mushrooms with crab, crackers, parsley, shrimp and salt. Spread this mixture over sole and roll, placing seam side down in a 12 X 8 dish. In a saucepan melt 3 tbsp. butter, blend in flour and salt. Add enough milk to mushroom liquid to make 1 1/2 cups. Add with wine to saucepan. Cook and stir until mixture thickens and bubbles. Pour over fillets.
Bake at 400 F. for 25 minutes.
Sprinkle with cheese and paprika. Return to oven for 10 minutes.
