4-6 oz. boneless, skinless chicken breasts;
1/4 cup cornstarch,
3 tbsp. vegetable oil,
1 tbsp. fresh chopped ginger,
2 crushed garlic cloves,
3/4 - 1 lb. broccoli, stemmed, trimmed and cut into spears,
3/4 cup orage juice,
1/2 cup apricot jam,
Asian- style chili sauce (optional),
2 tbsp. soy sauce,
2 tbsp. rice vinegar,
salt, pepper

Season chicken with salt, pepper and coat in cornstarch, shaking off excess. Heat oil in skillet over medium-high heat. Add chicken and cook 3- 4 minutes per side. Remove and place on heatproof platter. Add ginger and garlic to pan and cook until fragrant. Add orange juice and bring to boil. Add Broccoli and cook, tossing gently until it becomes just tender and turns bright green. Remove broccoli from pan and arrange around chicken.Add remaining ingredients to plan and cook just until jelly melts and sauce begins to thicken slightly.

Spoon over chicken and broccoli and serve.

Serve with rice or Asian style noodles.
