1 Tbsp. oil
1 lb. boneless chicken breast, cut into strips
1 large onion, chopped
2 green bell peppers, chopped
5 cup water
2 tsp. salt
2 bay leaves
2 lb. chorizo sausage or spicy Italian sausage, cut into 1-inch pieces
3-4 cloves garlic, crushed
2 stalks celery, sliced
1/2-1tsp. cayenne pepper
3 cup uncooked long grain rice
1 (6 oz.) can tomato paste
2 lb. fresh med.-sized uncooked shrimp, peeled, deveined

Heat oil in 6-quart Dutch oven over medium heat. Add sausage, chicken, onion, garlic, peppers and celery. Cook until chicken is no longer pink, stirring occasionally. Stir in water, salt, cayenne, tomato paste and bay leaves. Bring to a boil; stir in rice and shrimp. Reduce heat to simmer. Cover; cook 25 to 30 min. or until rice is tender and fluffy, stirring frequently. To serve, remove bay leaves.
