1 (9-inch) pie shell, unbaked
2 1/2 T. tapioca
3/4 c. sugar
1/4 tsp. salt
4 c. fresh peaches, sliced
1 T. lemon juice
Topping:
1/3 c. brown sugar, packed
1/4 c. flour
1/2 tsp. cinnamon
2 1/2 T. butter, softened

Directions:
Directions:
Mix tapioca, sugar, salt, peaches, and lemon juice. Let stand 5 minutes. Spoon into unbaked 9-inch pie shell. Mix topping ingredients together with fork until the size of peas. Sprinkle on top of peach mixture. Bake 45-50 minutes at 425º.
