3/4 c. . Butter
1-1/2 c. firmly packed brown sugar
2 T. water
2 c. semi-sweet chocolate chips
2 eggs
2-1/2 c. flour
1-1/4 tsp. baking soda
1/2 tsp. salt

Directions:
Directions:
350º, 10 - 12 minutes, no longer -
1. Over low heat, cook butter, sugar and water until butter is melted.
2. Add chocolate chips and stir until partially melted.
3. Pour into large mixing bowl and let stand about ten minutes to cool.
4. With mixer at high speed, beat in eggs one at a time.
5. Add dry ingredients, beating (or stirring) just until blended.
6. Roll cookies into balls, or use a cookie scoop, and place 2 inches apart on lightly sprayed cookie sheet. Bake at 350 for 10-12 minutes, no longer.
7. Remove from oven and immediately place a mint on each hot cookie. Allow the mint to soften and swirl over cookie with back of spoon.
8. Once cooled/hardened, enjoy!
