12 slices bacon, chopped medium
12 slices hearty white sandwich bread, crusts removed
2 McIntosh or Golden Delicious apples, peeled, cored and thinly sliced
2 C. sharp cheddar cheese, shredded
3 C. whole milk
6 large eggs
1 tsp. spicy brown mustard
1/2 tsp. salt
1/4 tsp. pepper
2 Tbsp. unsalted butter
1/2 C. Parmesan cheese, grated

Directions:
Cook bacon until very crisp, transfer to paper-towel lined plate. Grease a 13x9-inch baking dish. Arrange 6 slices of bread in a single layer in prepared dish, cutting bread as needed to fit. Spread half of the apples over the bread, sprinkle evenly with bacon and cheddar; top with remaining apples. Arrange remaining bread slices in a single layer over top, cutting bread as needed to fit. Whisk milk, eggs, mustard, salt and pepper together, and then pour evenly over bread. Press gently on bread to submerge. Cover with plastic wrap and refrigerate for at least 8 hours or up to 1 day. Heat oven to 350 degrees. Unwrap strata, melt butter and drizzle over top, and sprinkle with Parmesan. Bake 50-60 minutes until strata is puffed and golden brown. Serve hot. Serves 6-8.
