1/3 Cup Extra-Virgin Olive Oil
1/4 Cup Fresh Lemon Juice
1 Shallot (Minced)
1 Small Clove Garlic (Minced)
Salt and Pepper to Taste
1 Teaspoon Sugar
2 Pounds Mixed Heirloom Tomatoes (Cored, seeded and cut into 1/2 pieces)
1 Pound Penne or Campanelle Pasta
12 Ounces Fresh Mozzaralla Cheese (Cut into 1/2 inch pieces)
1/2 Cup Chopped Fresh Basil
1/2 Teaspoon Grated Lemon Zest


Directions:
Directions:
* Whisk olive oil, lemon juice, shallot and garlic in a large bowl
* Season with salt and pepper
* Add sugar
* Add tomatoes and gently toss
* Let all this marinate at room temperature for 15 minutes
* Cook pasta in salted water and drain
* Run cold water over pasta
* Add pasta and mozzarella to the tomato mixture and toss
* Refrigerate, tossing occasionally until serving
