1/3 c low-sodium soy sauce
1/4 c cold water
2 tbsp. light brown sugar
1 tsp. cornstarch
1 tsp. ground ginger
1/2 tsp. garlic powder
1 lb chicken, cut into bite size pieces
1-2 tbsp. vegetable oil
2-3 c. broccoli florets, cut into bite size pieces
1/2 c. diced onion
2 c. cooked white rice

In a large bowl combine soy sauce, water, sugar, cornstarch, ginger and garlic powder, stir until all ingredients are dissolved. Add chicken pieces to soy sauce mixture and marinate, covered in the refrigerator for 1 hour or overnight. Drain chicken, reserving marinade. Heat a large nonstick skillet or wok over medium high heat. Add vegetable oil and swirl to coat bottom of pan. Add chicken and stir fry for 4-5 minutes or until brown. Remove chicken from skillet set aside. Add broccoli and onion to hot skillet and stir fry for 3-4 minutes. Stir in reserved chicken and marinade, cook 3 minutes stirring occasionally or until sauce thickens. Serve over rice.
