3 cups rolled oats
1 cup coarsely chopped walnuts
1 cup coarsely chopped almonds
1/2 - 1 cup pumpkin seeds
1 tablespoon cinnamon
1-½ teaspoon pumpkin pie spice
½ teaspoon sea salt
½ cup maple syrup
½ cup coconut oil melted
2 teaspoons vanilla

Additions:
chopped dried apple
dried cranberries

Preheat oven to 300º. Place rolled oats, chopped nuts, pumpkin seeds and spices into medium-sized bowl. Mix well.

Add maple syrup, melted coconut oil and vanilla to oat mixture. Stir together.

Spread mixture onto large cookie sheet. Bake 35-40 mins turning occasionally with a spatula.

Remove from oven and stir in dried fruit if desired. Let cool completely before transferring to large glass jar.

When I first started making this, it would get eaten warm by the handful before making it into storage. It is great with milk, as part of a yogurt parfait, or just as a snack on its own.
