1 pound shrimp
2 tablespoons scallions
3 tablespoons diced celery
2 tablespoons chopped parsley
11/2 teaspoons lemon zest
3 tablespoons mayonnaise
1 cup cornbread crumbs
1 egg, beaten
Salt and freshly ground black pepper
A dash of Tabasco
3 tablespoons, oil

Directions:
Directions:
Cook and peel the shrimp and chop. In a large bowl mix the shrimp with the scallions, parsley and lemon zest. Stir in the mayonnaise, cornbread crumbs and the egg, and beat with a whisk or wooden spoon until evenly distributed. Season with salt, freshly ground pepper and Tabasco. Form into patties and sauté in oil until both sides are nicely browned. Drain on paper towels. Serve on soft buns with lettuce, tomato and tartar sauce.
Serves 4.
