6 T. butter
6 T. flour
2 1/2 c. milk
2 c. half and half
2 T. butter
3 medium sweet onions, thinly sliced
7 lbs. russet potatoes, peeled and thinly sliced
1 1/2 lb. bacon (or ham), cooked and crumbled
4 c. shredded cheddar cheese (or whatever you like) plus 1/2 c. for the top

Preheat oven to 350º F and grease a large baking pan. Cook bacon and set aside. Melt 6 T. butter in a large saucepan over medium heat. Stir in flour and whisk for about 1 minute. Remove from heat and whisk in milk and half and half. Return to heat and bring to a simmer while stirring. As sauce thickens, add cheese and continue to whisk (may have to add more milk so it doesn't get too thick). Add salt and pepper to taste. Set aside. In skillet, cook onions in 2 T. butter until browned slightly. Layer in pan: first sauce, then potatoes, onions, and bacon...3 layers. Season again with salt and pepper. Cover with foil and bake for 1 hour. Remove foil and continue to bake for at least another hour until potatoes are done (last 1/2 hour, sprinkle with 1/2 c. cheese)
